*3 Tbsp. olive oil *1 1⁄2 Tbsp. cider vinegar *1 Tbsp. Dijon mustard *1 Tbsp. sugar
*1/2 tsp. salt *1/4 tsp. pepper *1 apple, halved & thinly sliced *1/4 cup onions,
cut into thin strips *3/4 pound spinach, leaves torn *1/2 cups toasted pecans
In serving bowl, whisk oil, vinegar, mustard, sugar, salt & pepper until thick. Add
apple & onion. Toss until apples & onions are covered with dressing. Place
spinach on top, then pecans. Toss just before serving.
