*2 yellow squash *1/4 cup chopped sweet onion *2
cups chopped spinach *1 tsp. dried parsley *2 Tbsp.
olive oil *1/2 tsp. chopped roasted garlic *salt &
pepper
Heat the oil & garlic over medium heat. Sauté the
squash, onion & parsley together till the squash &
onion are just beginning to soften (about 8 minutes).
Add in the spinach. Sprinkle in the salt & pepper.
Continue to cook till the spinach is wilted (about
another 4 minutes).
